Agave Nectar

Agave nectar or Agave syrup is a plant-derived sweetener produced from Agave salmiana and blue agave which is commonly found in the southern U.S. and South America. It's about 1.5 times sweeter than sugar and comes from the same plant that's used to make tequila.

Agave syrup has a high level of sweetness due to its structure being more than 50% fructose. Agave nectar has a very low glycemic index because most of the sugar in it is fructose. Glycemic index is a measure of how quickly the sugar is absorbed into the bloodstream. Fructose does not raise blood sugar or insulin levels during a short period of time and can be considered diabetic acceptable.
